Preservation
To preserve the acorn-fed Iberian chorizo you must keep it hanging in a dry and well-ventilated place with temperatures between 15 and 18º if possible. If you have other hanging sausage pieces, try not to let them touch each other.
It can also be kept in the fridge, but to avoid the loss of quality of the product or that it takes on any strange flavor, we recommend that it be kept in the same vacuum bag, well closed or covered with transparent film smeared with a little oil.
Preparation
To make the most of the chorizo and make it look better on the plate, cut the piece obliquely so that longer and more colorful slices come out that are consumed in at least two bites.
